There's a paint available at any home center that makes any wall you paint it on into a chalk board. Or you could frame up a sanded and framed piece of plywood into one too. Depends on how big a chalk board you feel you need.
Good call David. I have heard of that paint before but completely forgot it exists. Does anyone else have any experience with it?
I've seen it in the stores and have watched tv shows where designers or homeowners have used it, no personal experience as yet. I'd be interested in hearing from someone who has had hands on with it myself. Barring that I'd see how it works on the easily removed variant first.
I might go and get some start experimenting! I'd like to use it right on drywall…
Go for it. Just remember, you live in an apartment and management might get a tad irked if you use the stuff on their walls. You might be able to find some scrap drywall at construction sites and if all else fails, some home centers sell more manageably sized pieces for those who want to do some patching.

How well it writes on, how well it holds up over time, etc. While I've had plenty of time the past 2 and a half years, I selfishly decided that eating was a little more important than playing with paint. Oh well, that's me, always thinking of myself. Anyway, let us know.
