While interesting it’ll get about 8mpg so I hope they don’t have to travel far.
Far better is a lightweight aero trailer behind a small CUV if one is going to travel and get 25mpg when done right with the same room and a vehicle that can be used separately.
At least make a curved over the top front, a flush skylight and clean gently curving sides could increase mpg by 50% at no extra cost. Also as bent plywood is much stronger, stiffer you can use half as thick.

Congrats on the build Parker ! It is very inspiring to see people such as yourself just go for it even though you have almost no construction experience. I like that you used an old truck that you already owned & schooled yourself regarding what needed to be done & how to accomplish it. 600 watts of solar & 600 amp/hr capacity batteries – sweet!!
There will always be the naysayers & critics but you persevered & have a sweet little home on wheels to show for it. 4WD to boot. I’m sure you will have fun changing things as time goes on. I think once you get a water tank & shower area you will be set.
